Apple compote with cinnamon for preserving
A classic apple compote with a mild cinnamon note. Well suited as a pantry supply for breakfast, desserts or simple emergency cooking.

Ingredients
For 8 jars of about 500 ml each:
- 4.2 kg apples, peeled and cored weight
- 1.2 l water
- 450 g sugar
- 160 ml lemon juice
- 4 cinnamon sticks
- 2 tsp ground cinnamon
- 1 pinch of salt

Method
1. Clean the jars and lids thoroughly and prepare them hot.
2. Peel and core the apples, then cut them into even pieces.
3. Bring the water, sugar, lemon juice, cinnamon sticks, ground cinnamon and salt to the boil in a large pot.
4. Add the apple pieces and simmer gently for 5 to 8 minutes until slightly soft but not falling apart.
5. Remove the cinnamon sticks.
6. Fill the hot compote into the prepared jars. Leave about 2 cm headspace.
7. Wipe the jar rims clean, place the lids on and close firmly.
8. Process the jars in a preserving cooker or water bath at 90 °C for about 30 minutes.
9. Remove the jars, let them cool completely and check that the lids are sealed firmly.

Storage
Store in a cool, dark and dry place. Keep opened jars in the fridge and use within 2 to 3 days.
Shelf life
Keeps for about 6 to 12 months if prepared cleanly.
Safety note
Use only sound apples. Discard jars with bulging lids, mould, fermented smell, cloudy or foaming contents. If unsure, do not taste it. Discard it.
