Ingredients
1600 g ripe Concord grapes
240 ml water
1400 g white granulated sugar
50 g standard powdered jam-making pectin
240 ml water
1400 g white granulated sugar
50 g standard powdered jam-making pectin
Method
1. Wash, destem and crush the grapes. Bring to the boil with the water and simmer gently for 10 minutes. Leave the juice to drain through a jelly bag. For an especially clear jelly, chill the juice overnight and strain it again through a fine cloth.
2. Measure exactly 1200 ml of the extracted grape juice. Stir in the standard powdered pectin thoroughly and bring to a full rolling boil while stirring.
3. Add all the sugar at once, return to a vigorous boil and boil hard for exactly 1 minute. Skim off the foam.
4. Immediately ladle into hot jars of about 240 ml capacity, leaving 6 mm headspace. Wipe the rims clean and seal the jars.
5. Process in a vigorously boiling water bath for 10 minutes at altitudes up to 1830 m, or 15 minutes above that. Leave the jars undisturbed to cool for 12–24 hours, then check their seals.

Storage
Keep sealed jars in a cool, dry, dark place. Refrigerate after opening.
Shelf life
For best quality, store unopened for around 12 months; once opened, enjoy within 4 weeks.
Safety note
Use ordinary powdered pectin, not a special low-sugar pectin. Measure the grape juice, pectin and sugar precisely; processing in a water bath is essential.
