Guava and Lime Jelly

An aromatic jelly made from guavas and lime. It is fruity, intensely fragrant and ideal as a sweet pantry preserve.

Ingredients

For about 8 jars of 250 ml each:
- 2.5 kg ripe guavas
- 1.2 litres water
- 1 kg jam sugar 2:1
- 120 ml lime juice

Method

1. Clean jars and lids thoroughly and rinse them with hot water.
2. Wash the guavas, chop them roughly and place them in a large pot with the water.
3. Cook for 20 to 25 minutes until soft.
4. Let the mixture drain through a fine sieve or a clean cloth. Do not press hard if the jelly should remain clear.
5. Measure 2 litres of guava juice.
6. Mix the guava juice with lime juice and jam sugar in a large pot.
7. Bring to the boil while stirring and boil vigorously for at least 4 minutes.
8. Do a setting test.
9. Fill hot into clean jars and close immediately.
10. Process the sealed jars for 10 minutes in a boiling water bath.
11. Leave to cool and label.

Storage

Store unopened jars in a cool, dark and dry place. Keep opened jars in the refrigerator.

Shelf life

Unopened, keeps for about 9 to 12 months.

Safety note

For safe jelly, work cleanly and do not reduce the lime juice. Use only sound fruit. Discard jars with mould, a fermented smell, gas formation, spoilage-related cloudiness or a leaking lid.
