Ingredients
1440 ml diced firm, slightly underripe yellow peaches
360 ml diced red pepper
120 ml finely chopped yellow onion
2,5 ml chilli flakes
10 ml finely chopped garlic
10 ml finely chopped ginger
240 ml lightly measured brown sugar
300 ml cider vinegar with 5 % acidity
120 ml water
360 ml diced red pepper
120 ml finely chopped yellow onion
2,5 ml chilli flakes
10 ml finely chopped garlic
10 ml finely chopped ginger
240 ml lightly measured brown sugar
300 ml cider vinegar with 5 % acidity
120 ml water
Method
1. Wash, stone and dice the firm peaches. Cut the pepper and onion into small pieces as well; prepare the garlic and ginger.
2. Combine everything with the sugar, vinegar, water and spices in a large saucepan. Bring to the boil while stirring until the sugar has dissolved.
3. Simmer gently for five minutes. The salsa should retain a pleasantly chunky texture.
4. Divide the solid pieces between hot jars of approximately 240 ml, then pour over the hot cooking liquid. Leave 1.3 cm headspace, remove air bubbles and seal the jars.
5. Process for 20 minutes in a vigorously boiling water bath. Afterwards, leave the jars upright to cool for 12–24 hours.
