Apple compote with cinnamon for canning
A classic apple compote with a mild cinnamon note. Good as a pantry supply for breakfast, desserts, or simple emergency cooking.

Ingredients
For 8 jars of about 500 ml each:
- 4.2 kg apples, peeled and cored weight
- 1.2 l water
- 450 g sugar
- 160 ml lemon juice
- 4 cinnamon sticks
- 2 tsp ground cinnamon
- 1 pinch of salt

Preparation
1. Clean the jars and lids thoroughly and prepare them hot.
2. Peel and core the apples, then cut them into even pieces.
3. Bring the water, sugar, lemon juice, cinnamon sticks, ground cinnamon, and salt to a boil in a large pot.
4. Add the apple pieces and simmer gently for 5 to 8 minutes until slightly soft but not falling apart.
5. Remove the cinnamon sticks.
6. Fill the hot compote into the prepared jars. Leave about 2 cm headspace.
7. Wipe the jar rims clean, put on the lids, and close firmly.
8. Process the jars in a canner or water bath at 90 °C for about 30 minutes.
9. Remove the jars, let them cool completely, and check that the lids are sealed firmly.

Storage
Store in a cool, dark, and dry place. Keep opened jars in the refrigerator and use within 2 to 3 days.
Shelf life
Keeps for about 6 to 12 months if prepared cleanly.
Safety note
Use only sound apples. Discard jars with bulging lids, mold, fermented smell, cloudy or foaming contents. If unsure, do not taste it. Discard it.
