Ingredients

960 ml finely sliced orange peel with the white pith attached
960 ml chopped orange pulp without seeds
240 ml thinly sliced seedless lemon
1440 ml water
1440 ml white granulated sugar, measured by volume

Preparation

1. Wash the oranges and lemon thoroughly. Cut the orange peel with its white pith into very thin strips. Remove seeds and membranes from the orange pulp, then chop it. Slice the lemon thinly, including its peel, and measure all the ingredients.
2. Combine the fruit, peel, and water in a large pot. Simmer gently for about one hour until the peel softens.
3. Stir in the sugar, bring the mixture to a boil, and cook for about 45 minutes to the jellying point, stirring occasionally. Skim any foam if needed.
4. Fill prepared hot 240 ml canning jars with the hot marmalade, leaving about 6 mm of headspace, and close them properly.
5. Process the jars for 15 minutes in a rolling-boil water bath. Remove upright, let cool for 12–24 hours, and check the lid seals.

Storage

Store in a cool, dry, dark place. Refrigerate jars after opening.

Shelf life

For best quality, store unopened for about 12 months; once opened, keep refrigerated and use within 4 weeks.

Safety note

Do not change the amounts of sugar or fruit. The white layer of orange pith is important for proper gelling.
